Come Direct and coordinate the activities of the Food Service Department to provide meals to patients, employees and guests. Establish policies and procedures to provide direction for cafeteria menu formation, food preparation, distribution and service, budgeting/ purchasing/sanitation standards, safety practices, staffing and staff development.
Determine quality and quantity of food required; control food costs.
Supervise department personnel, food production, and service programs.
Ensure food is prepared in prescribed manner for optimal nutrition as well as economic handling and efficient use of time. Check food for flavor, temperature and appearance on a regular basis.
Purchase food and direct employees in preparing meals for special occasions: medical staff buffets, board meetings, recognition dinners, etc.
Interview and evaluate new employees, prepare work and vacation schedules and maintain attendance records.
Maintain professional growth with attendance at seminars, conferences and professional affiliations. Attend Quality Leadership Team meetings, as well as meetings on safety and infection control.
Document purchasing, receiving and inventory control of food and supplies, controlling costs and staying within budget.
In the event of staffing problems, perform any and all duties in the kitchen, trayline, cafeteria and dishroom.
Inspect work, storage and servicing areas to ensure regulations and directions regarding dietetic activities are followed.
Develop procedures for handling and storing of supplies, equipment sanitation, record keeping and compilation of reports.
Review department's performance, change techniques or procedures to improve service, simplify workflow, promote efficient operations and assure compliance with regulatory requirements.

High school graduate or equivalent.
Graduate of a Dietary Managers course approved by the Dietary Managers Association or equivalent, if required by state regulations.
Degree in dietetic technology, dietetics, culinary arts, or foodservice management preferred.
Food Handlers permit if required per state regulations ServSafe Food Safety Certification preferred
One or more of the following preferred (or required if indicated per state regulations):
- Certified Dietary Manager,
- Certified Food Protection Professional with the Dietary Managers Association Dietetic Technician,
- Registered, with the Commission on Dietetic Registration of the American Dietetic Association
- Certification with the American Culinary Federation
Two years experience in large quantity food preparation with experience in acute care hospital preferred.
Two years experience in a foodservice supervisory role and experience with therapeutic diet preparation preferred.
Knowledge of therapeutic diets preferred.
